Thanksgiving is next week. Can you believe it? The holidays have surely crept up on us quickly this year, but I, for one, am thrilled that they are here! Besides the great company of family and friends, one of the best parts of the holidays is, without a doubt, the food. In the spirit of Thanksgiving, this week’s recipe will be for Liberty Tree Tavern’s cornbread stuffing! Enjoy! Recipe provided by www.magicalrecipes.net.
12 cups cornbread cubes
1 tablespoon fresh chopped garlic
1 cup onion, chopped
1 cup celery, chopped
1 teaspoon rubbed sage
1 teaspoon dried thyme
1 teaspoon poultry seasoning
1 teaspoon kosher salt
1/2 teaspoon black pepper
1 1/2 cups turkey stock (chicken may be substituted)
In a preheated 400 degree oven toast bread cubes 5 to 7 minutes or until barely golden.
In a large skillet over medium/low heat cook the garlic, onions and celery for 3 minutes or until softened.
Transfer to a bowl and add the bread cubes, herbs, salt, pepper, and chicken broth.
Toss well and adjust seasoning as desired.
Additional broth may be necessary to achieve the desired consistency.
Have any of you ever had a Thanksgiving meal in a Disney Park or resort? Would you recommend holiday dining to others?
Kristin Casagrand is a student currently studying physical therapy at Bellarmine University. Born and raised in Pennsylvania, Kristin has taken many a family vacations as a child driving 24 hrs, cramped in the back of the car and fighting with her sister to get to Disney (definitely worth it though). She looks forward to sharing “A taste of Disney” with everyone each week.
