We have seven day Base Magic your way tickets, but due to a scheduling conflict we will only be visiting the parks six days.
So rather than lose that day if we go to MK in the AM the Animal kingdom in the PM will that count as two days off our ticket??
Example plan:
day one: MK
two: Epcot
three: MK
Four: MGM
five: AK
Six: MK AND MGM (or any two parks)
Equals Seven Days right??
Just a note, we bought seven day tickets for $2.00 more than the 6 day.

Because you have the 7-day ticket unfortunately no you can't use it that way. You are only allowed to use one "day" per day if that makes any sense. Now, if you have the park hopper option added you can of course do more than one park a day but otherwise it doesn't work like that sorry to say. That said however, the tickets don't expire for awhile and you can always add the "no expiration" option to keep that extra day as long as you'd like!

.... no, wrong, unfortunately. A day is not the same as an admission. A day is a contiguous set of hours beginning at the hour the first park opens on that calendar day, and ending when the last park closes that day. You have a seven day ticket. That means you can use that ticket on seven separate days. It does not mean you get seven separate admissions to any of the parks.
When you try to go to your second park on the same day and put your ticket in the reader, the turnstyle will not unlock. The readout will tell the cast member your non-hopping ticket has already been used at a different park that day. The Cast Member will explain to you that you need to either go back to that same park and enjoy the rest of your day there, or go to Guest Services and add the Park Hopper option.
As you noted, a 7 day ticket costs $2.00 more than a 6 day ticket. If what you wanted to do was possible, no one would buy the Park Hopper option, as anyone could just buy a 10 day ticket for about $10 more than a 5 day ticket, and go to two parks each of five days. Doesn't work that way.
Now, just to add even more confusion to this process, if you purchase the Water Park Fun & More option, the extras you get with that really are *admissions*, not days. You can go to Disney Quest, Pleasure Island, Blizzard Beach, and Typhoon Lagoon all on the same day, and use up four of thesse lesser admissions.

I don't mean this in a harsh way, I'm just trying to help by sharing information ....
It would be a TERRIBLE idea to pay for the no expiration feature in order to save that 1 remaining day. Adding the no expiration feature to a 7-day ticket costs about $101. If you were to buy that 1 day of admission at a later time, it would cost about $75. So as you can see, paying over $100 to "save" $75 truly isn;t worth it.
As mritty said, that 7th day is only costing the OP about $2 more, so it's not like there is a lot of value being missed.
On a slightly different subject, buying the no expiration feature is only a good idea if the leftover days will COMPLETELY cover your park needs for one or more future trips. If you pay for the NE feature but still need to add a day or 2 or 3 to meet your park needs for a future trip, then you've wasted up to several hundred dollars PER PERSON compared with buying separate regular tickets for each trip. I can supply examples with all the math spelled out if anyone's interested ....

No. It doesn't. It equals 6 days. You can not park hop on a base ticket. You would need to add the Park Hopper Option to your ticket do keep your plans for Day Six. It's only $45.00 plus tax per ticket.
