Tangerine Cafe in Morocco at Epcot. The schwarma platters without the meat are terrific. We love the hummus, parsley salad and warm pitas with sauce. Yum!

I also recommend breakfast at Fresh (in the WDW Dolphin hotel). That have a terrific buffet that has tons of fresh fruits and veggies. Like some of the other restaurants they will make omlettes to order, but they offer a lot more veggie choices.

You could probably do well at 1900 Park Fare. Lots of non meat items on the menu. My favorite is the strawberry soup.
