We don't go to the parks on Christmas day because it's the busiest day of the year. The resorts have something special usually like free cookies and hot chocolate or a visit from Mickey and Minnie. I don't know if the parks really do anything special but then again I'm not sure.
As far as I know that other than the possibility of the parks closing due to capacity (usually only MK I think), its not much different than the days leading up to it...I believe Wishes is the version they do for the Christmas parties, as are the parades.
