I'd go to allears.net and look at menus of places you are thinking of going. I've found it easier to eat healthy in WDW lately.
Are you wanting counter? Sit down?
I think I could have three or four days worth of at least moderately healthy food at the Sunshine Seasons in the Land Pavilion, without repeating a meal....
Columbia Harbor House's sandwiches might be another good one.
I think you can get Salads at Pizzafari and Pizza Planet, though I've never tried them.

The Sunshine Food Fair in the Land pavillion in EPCOT is a great suggestion. Every single item there is healthy and natural with produce picked straight from their own pavillion's gardens.
I still say Jiko at Animal Kingdom Lodge Resort has upscale, unusual and very healthy meals. They even have a tofu dish that is out of this world.
Flying Fish at the Boardwalk Resort is fresh and delicious. Their fish and seafood preparations are not loaded down with heavy sauces.
For low-carb you can try Yachtman's Steakhouse at the Yacht Club. Keep in mind this one is real pricey but a wonderful treat.

I still say Boma (and Jiko) at Animal Kingdom Lodge have excellent healthy choices. Boma is only a 1-ticket buffet meal while Jiko is 2 I believe.

EPCOT - you can't go wrong at Sunshine Seasons. For dinner, try Tokyo Dining in Epcot. Sushi can be very healthy, and the hibatchi is also light. (Just ignore all the oil they squirt on the frying surface. It won't hurt you that much.)
MK - In the MK, you can pretty much forget it. Go to a resort. The Wave at the Contemporary serves some wonderful healthy organic and sustainable fare. Vegetable Stew and Sustainable Fish of the Day are on the menu. The appetizer salads are great.
If you must eat at the MK the best bet might be a salad at the Columbia Harbor House. If it's open, try the Noodle Station if you absolutely must. Just be warned, the food is generally TERRIBLE there. Just awful. The horror...
AK - Tusker House had an ok tofu dish on the menu, and there is just a ton of vegetables. Great place. The food carts are pretty ok too!

Every restaurant now usually has at least one healthy item on the menu. Overall though. I'd recommend Sunshine Seasons in the Land pavilion in Epcot as being one of the healthiest.
Sorry, cant help ya....when we are on vacation.....we eat BAD!!!! but we love it!
