    Disney Recipe for Duck

    I'm looking for a Disney Recipe for roasted duck for Christmas. I saw a Disney themed Christmas special where they were roasting duck. I think it was from Grand Californian or Napa in Disneyland but I can't find the recipe anywhere. I've scoured Allears and it's not there! Anyone give me any leads?

    I'm a huge Donald fan, plus I'm a vegetarian, so I REFUSE to help you with this!!

    I am a proud card carrying Omnivore! Figure that is why God gave me incisors and did that Loaf and Fish thing!

    Anyways, I've very recently saw Disney Duck somewhere. I'll keep thinking. Did you try the Disney Food Blog? Maybe it was there.

    I just roasted a duck yesterday for the first time... but I just kind of made my own recipe by looking at about 4 or 5 online recipes and combining them (with a honey glaze, and with potatoes and butternut squash roasted right in the pan in the duck fat and honey glaze yummm). It needs to be a Disney recipe? It's the same as roasting a chicken or a turkey really.... but I guess if you want a glaze or spices that are specific to the recipe you're looking for....?

    I know I saw one somewhere too. I can't remember if it was the Disney Food Blog or the Guy Fieri Food Network Disney special. Heck it could have even been a Samantha Brown special. I have a lot of the Food Blogs saved in my email so I'm going to have to go back and check.

    It doesn't have to be Disney but the one I saw looked pretty awesome. I have one from Alton Brown that I may try. My mom dropped a bomb shell yesterday and said she was only serving cold cuts for Christmas Dinner. Big change from ham and either pork roast or prime rib. But hey, it's all about spending time with the family!

    Well I didn't see it on Guy Fieri nor Sam Brown so that narrows my list.
    My kids will go back to college tomorrow so I'll have more time to hunt.

    Yikes! Keep telling yourself that cold cuts are Okie Dokie and family time counts...I believe, I believe... Wow that is a mega switch in tradition. We don't let the "Mom's" host any longer, it is just too much for them, ours are getting up there. We did however, for Christmas at the In-Laws when Christmas was too much for her, we skipped dinner all-together and each of us brought 2-3 fabulous appetisers. There would be 10-12, all very different. MIL didn't have to do anything and we all gorged ourselves silly. A thought!

    We do Christmas Eve with my In Laws and we split the food. I usually cook something if I'm not working. Last year I did Italian Subs on sweet sub rolls. The cold cuts would work out fine on Christmas Day at my parents' since my SIL is in from Florida and wants to cook a big meal at my place for both sides of the family while we are at my parents' place.

    Let me know how your search goes, Gabe. I'll be looking on my end too.

    Arroz con Pato (Roast Duck with Cilantro Rice)
    Epcot International Food and Wine Festival 2007, Peru
    Serves 4

    A 4 - 5 pound duck, cut into 8 serving pieces
    1/4 cup fresh lemon juice
    1 teaspoon ground cumin seeds
    1 teaspoon salt
    1/4 teaspoon freshly ground black pepper
    1/4 cup canola oil
    2 - 12 ounce bottles lite beer
    1 cup water
    2 cups long grain rice
    1 cup frozen defrosted peas
    1 cup finely chopped fresh cilantro

    1. Set the duck pieces in a shallow dish and rub in in the lemon juice, cumin, 1/2 teaspoon salt and 1/8 teaspoon pepper. Cover and refrigerate for six hours.
    2. In a large heavy casserole, heat the oil over high heat until it hazes. Add the duck and brown it well on all sides. Drain off the fat from the casserole and add the beer and water. Bring liquid to a boil, reduce heat, cover and simmer for 45 minutes. Transfer the duck to the plate, cover and keep warm. Transfer the duck to a plate, cover and keep warm.
    3. Pour the liquid off and strain and measure 3 1/2 cups. Pour the liquid back to the casserole and bring it to a boil. Stir in the rice, bring liquid back to a boil, reduce the heat and cook the rice for 20 minutes, covered.
    4. Stir in the peas, cilantro, 1/2 teaspoon salt and 1/8 teaspoon pepper. Arrange the duck on the rice; cover the casserole and return it to low heat for a few minutes to heat the duck.
    5. To serve, mound the rice and peas on a serving dish and arrange the duck pieces on top.




    Still not the one I saw.
