I've seen rings, but I am uncertain by what you mean by subtle. I've seen custom rings as well as rings in WDW/DL, some of the Mickeys are done with stones whereas others are part of the band. The ones that are POTC seem very blatant to me. I don't think any rings are in abundance as I don't always see them. If this is an engagement type of ring, then you may want to look into getting a custom one from your jeweler.
The ring I have was bought at the DLR several years ago with three stones that make up the Mickey, but I wouldn't call it subtle

There's a little jewelry section in the World of Disney store at DTD that has all sorts of stuff. I'm sure you could find a ring there. I got a really nice charm that is just a silver mickey sillouette. Very subtle but nice.
