    The easiest chicken recipe I have ever had I got from my mother. Layer chicken pieces in a baking dish. You can use whatever you like. Mr. iwbm likes breasts, I like thighs. Chop an onion over the chicken. Measure 1/4 cup soy sauce and 3/4 cup water and pour over the whole mess. Bake at 350 degrees until the chicken is done. Fast, simple. I always serve it with rice, oriental style frozen vegetables, and pineapple rings. Depending on the size of the chicken pieces, you can have dinner on the table in 30 minutes or so.

    My Outback chicken is already there but here is another I kinda made up.

    Creamy Mushroom Chicken

    I cut a boneless chicken breast in cubes, sprinkle it with salt, garlic and onion powder and some paprika.
    Fry those up in a little olive oil to get the pieces browned a bit but not fully cooked.
    Transfer to a plate, cover.
    Fry up chopped onions in a little bit of olive oil, then add chopped mushrooms, cook those awhile.
    Add some wine, white or red, scrape up the bottom of the pan, lots of flavor there.
    Let it cook down a bit, the mushrooms will absorb a lot.
    Add some cream, mix it all up, put the chicken back in and let it simmer on low until it thickens. Salt and pepper to taste.

    YUMMY.

    chicken marinade i swear by is
    2 tbsp honey
    2 tbsp soy sauce
    2 cloves of garlic crushed.
    mix it all together and let the chicked (or pork)
    marinade for 30 mins

    Top Secret Recipes Cookbooks which copy all the restuarants dishes and desserts..... if there is one from a restuarant you love... i can check to see if it is in there!

    my fav is boneless, skinless breasts covered with peach mango salsa from costco - really, that's it!
    slow cooker, or bake - yum!

    another good one that we use mainly for whole chicken or turkey that's a real wow for holidays is:
    cover the turkey with dried apricots, a jar of apricot preserves, some dole 100% frozen concentrated orange, peach, mango juice, a quartered orange, a quartered sweet onion, a quartered apple - and roast it however you normally would
    it comes out so delish every time...
    if you are not the type to take the whole bird to the table - be sure to roast your bird upside down (breast side down) for the most melt-in-your-mouth moist white meat.

    I have this weird marinade I learn from a catering place MANY years ago..... Mix together a can of whole berry cranberry sauce with 2 packages of the dry onion soup mix ( like you make onion dip with ). Smash it all together and then use it with a london broil or roast and cook in a cooking bag in the oven, slowly. It is fruity and oniony and delicious. You can do a similar one with raspberry or peach jams and the onion mix...... experiment and have fun!

    The first time i made it, it was with a brisket...... You can also put in the oven bag pototoes and green beans, they all taste yummy together
