    Recipe Swap...

    Well, I have been pondering this idea for a new "general discussion" thread for awhile now, and I found out Amanda had the same idea!

    So here it goes,

    I figured we have a place where we type up our favorite recipes and share them with each other! This is a more advanced version of what's-for-dinner. Basically type up your favorite recipes and try some new ones!

    If we need to, we can always have themes like you could type up your favorite:

    1) Dip
    2) Homemade Soup
    3) Disney Recipe
    4) Desserts

    etc etc etc.

    We can also share drinks (such as the Kungaloos) or others!

    This way if you ever don't know what to make for dinner, just go through these pages and find something delicious! Post what your looking for or just post your favorites!




    To start things out, I've been looking for a good dip to go on Garlic and Herb crackers if anyone has a homemade one. I'll post one of my favorite recipes later in the week!

    what a great idea, i'll find some of my fave recipes out. If anyone can offer a good recipe for fudge or chocolate brownies suitable for kids i'd be grateful. My DS it trying to learn to cook but the recipe we followed made brown coloured house bricks!!

    Very cool! We were just discussing Ohana's beans this weekend in another thread. This would have been the place to do it! We also discussed alcoholic beverages, right Fiona? Now we have a place to do it without annoying anyone, haha!

    I have lots of recipes for sweet treats like Baileys Truffles! Also, an unusual recipe but really delicious, a zucchini cake. Post a recipe a day! *Goes to get her recipe box and a cup of coffee*

    Are we going to be the ones that lower the standard and include alcohol in all the recipes in some form?

    Baileys Truffle Fudge

    2 cups semi-sweet chocolate chips
    3/4 cup white chocolate chips
    1-1/2 cups icing sugar
    1/2 cup Baileys
    3/4 chopped nuts
    2 Tbsp butter

    Butter a square or rectangular glass dish.
    Melt chocolate and butter in microwave or in a bain-marie until soft enough to stir.
    Stir in sugar and Baileys until smooth.
    Add chopped nuts, blend well.
    Place mixture in buttered dish, press down evenly.
    Refrigerate for at least two hours.

    To cut into squares, leave at room temperature until soft enough to cut.

    Mulled wine biscuits

    140g raisins
    75g dried cranberries
    150ml red wine (lots left over to drink from the bottle)
    100g redcurrant jelly
    1tsp ground cinnamon
    quater tsp ground cloves
    pinch of chilli powder
    50g walnuts (chopped)
    50 whole blanched almonds(chopped)
    100g chocolate(chopped)
    75g Self raising flour
    finely grated rind of 1 orange
    50g butter, melted
    1 egg
    icing sugar for dusting

    Put raisins, cranberries, wine, jelly and spices in a smal pan, heat and allow to boil until syrup is reduced by half (about 2-3 minutes boiling)
    In a large bowl put nuts, chocolate, flour, orange rind, butter & egg.
    Add syrup mix to the bowl and mix to a paste
    On a greased baking sheet space teaspoons of the mixture (it will spread)
    Bake at 180 C/350 F/gas 4 for about 20 minutes
    leave to cool on a baking sheet for about 3 minutes then transfer to a wire rack.

    Ok, i know mulled wine is traditionally a Chrismassy thing but these are very yummy, and as they have fruit in them they are TOTALLY good for you, the red wine is just something that you'll have to put up with.

    You're welcome. When I try a recipe I usually write what the results were, how much everyone liked it (or not) and the date. It's fun to go through them and see when I made it last or who liked it the most. That fudge one I had made for a holiday party in 2002 and I wrote "amazing"!

    Outback Chicken

    4 boneless, skinless chicken breasts
    4 Tbsp lemon juice
    1 cup chopped onions
    2 cups mushrooms, sliced
    1 cup Vermouth or dry white wine
    12 slices bacon
    4 slices thick cheddar cheese (or grated cheddar)
    olive oil
    salt
    pepper
    minced garlic
    pinch of cayenne pepper
    basil or thyme

    Put chicken breast in an oven safe dish. Drizzle olive oil and lemon juice and season to taste with salt, pepper, garlic and cayenne.
    Bake at 350 until done, about 40 minutes.

    While chicken is cooking, fry bacon until done, but not crisp. Set aside.

    In another pan, melt butter and fry up onions, add the mushrooms and basil and sauté until desired done-ness.
    Add Vermouth or wine and let reduce until the mushrooms have absorbed most of the sauce. Set aside.

    When chicken is just done, cover with mushrooms, layer bacon over mushrooms and top with cheese. Return to oven to melt the cheese over the chicken and serve!
