Yum, we are having leftovers.
I bought two giant chicken breasts and cut them in strips, seasoned them and dipped them in melted butter, then rolled them in crushed Ritz crackers. Bake @375 til done. Super yummy.

I'm doing well. Just trying finish up with college...almost there, thank goodness. Not too much else going on, looking forward to the holidays and of course counting down my to my next Disney trip
