    Tonight i'm cooking:

    Fried Crappie (fresh fish)
    coleslaw
    poke salad w/ eggs
    corn bread
    dessert will be left over blackberry cobbler with vanilla ice cream

    Things I have learned living in ARKANSAS
    1. Possums sleep in the middle of the road with their feet in the air.
    2. There are 5,000 types of snakes and 4,998 live in ARKANSAS.
    3. We have four seasons: Almost Summer, Summer, Still Summer and Christmas.
    4. A carbonated soft drink is not a soda, cola or pop...It's a 'coke' regardless of brand or flavor. Ex...What kind of 'Coke' do you want?
    5. People actually grow and EAT okra!!
    6. Sweet Iced Tea is appropriate for all meals.
    7. You have to switch from 'heat' to A/C in the same day.
    8. All the festivals across the state are named for an animal, insect, grain, vegetable or fruit.
    9. You work until you are done or it's too dark to see.
    10. Everyone can't be an Arkansan: You have to be BRAVE to live here!

    What is poke salad and may I have mine without eggs????? Also, not a big fan of fish, can you fry up some chicken?!!?

    It is a Southern thing!!
    They are greens (like mustard greens or turnip greens)
    they are boiled then heated in a skillet, then break an egg or two and scramble it into the greens. Like I said "its a southern thing!!"

    And yes I have some chicken I could fry, again.

    I love Red Lobster. I could eat their biscuits until I pop.

    Mr. iwannabeminnie is making Cheese Steaks. Very easy. First heat some olive oil in a skillet and saute some onion, bell pepper, and mushrooms. When done, split hoagie rolls and place deli roast beef on one side and swiss cheese on the other. Stick it under the broiler until the cheese is melted and the beef is heated. Then top with the sauted vegetables. Best served with Lays potato chips. For dessert we will have brown cows (root beer and vanilla ice cream).
