Things I have learned living in ARKANSAS1. Possums sleep in the middle of the road with their feet in the air.2. There are 5,000 types of snakes and 4,998 live in ARKANSAS.3. We have four seasons: Almost Summer, Summer, Still Summer and Christmas.4. A carbonated soft drink is not a soda, cola or pop...It's a 'coke' regardless of brand or flavor. Ex...What kind of 'Coke' do you want?5. People actually grow and EAT okra!!6. Sweet Iced Tea is appropriate for all meals.7. You have to switch from 'heat' to A/C in the same day.8. All the festivals across the state are named for an animal, insect, grain, vegetable or fruit.9. You work until you are done or it's too dark to see.10. Everyone can't be an Arkansan: You have to be BRAVE to live here!

Having a neighborhood meal- queso and chips. DH is taking the kids tomorrow so I won't have to worry about that. Not sure about Sunday but probably be roast.
tomorrow i'm making what i call Bandalero Mac n' Cheese.
some regular boxed mac n' cheese, while that's going, brown up some ground beef, mix in some salsa and seasonings, then throw it in with the mac n' cheese.
it looks like munge, but it is good stuff. a regular in our house.

We ended up having grilled garlic shrimp, mashed potatoes and green beans. (Tanner had a piece of grilled chicken)
Tonight....not sure yet, depends on if we go out for a nice lunch today or not...

Boil and de-bone chicken (we do leg quarters because they are cheap)
Large bag of Doritos crushed (Not to dust) put in bottom of 9x13 pan
place chicken on top of doritos
In sauce pan combine:
1 can cream of mushroom soup
1 can rotel
a hunk or two of velveeta
1 can of chicken broth ( I add a little more)
heat on low until cheese melts, pour over chicken and doritos.
Add grated cheddar on top if you like then pop into oven at about 350 until it bubbles. Let stand 5 min or so and enjoy.
We always have avacado's and sour cream on the side!
Add a salad and ta da!!
Easy meal!
When I boil the chicken, I boil enough for 2-3 casseroles and freeze the rest. Then on nights when time is short, your hardest part is done!

that sounds like something my mother does which she calls Mexican Pie. crushed Doritos, ground beef, and lots and lots of cheese in a casserole dish, baked.
it's like a flat ground up taco.
Home made pizza! My family loves it, it is easy and I actually love the leftovers if they are any.

Difference:
I add a small container of sour cream instead of the chicken broth and a small can of diced green chilis.
I also layer it with corn torillas (the flat kind) because I can never get them to roll.
I don't help much in this thread.. tonight.. going out for sushi..
We went out tonight for Mexican!!!!!! It was fajitas and raspberry margaritas for me!![]()
