Decided on chicken tortilla soup in the crock pot for tonight!!! :yes:

4 chicken breast
1 can (4 oz) mild green chilies
3 cloves of garlic minced
1 diced yellow onion
3 cans (15 oz each) diced tomotoes

1 lime
8 corn tortillas sliced into strips about 1/4" wide
1 cup shredded cheddar or monterey jack cheese
optional sour cream
Place chicken breast in bottom of crock pot. In a seperate bowl combine, chilies, garlic, onion, tomatoes, chicken broth and cumin, mix together and pour over top of chicken.
Cook on high for 3-4 hours or 6-8 hours on low. When cheicken is cooked and tender us a fork to shred the meat. Just before serving add tortilla and cilantro to crock pot and stir.
Serve in bowl topping each serving with a squeeze of lime juice, cheese and a spoon of sour cream if you'd like.

went with the stuffed peppers last nite which came out really good considering was making it on a electric skillet and a microwave.had some lumpy mashed potatoes(we like em lumpy) along with it and used a vodka cream spaghetti sauce in lieu of tomato soup ..tonite will prob be chicken tv dinner. I did my share of cooking yesterday...lol
