Things I have learned living in ARKANSAS1. Possums sleep in the middle of the road with their feet in the air.2. There are 5,000 types of snakes and 4,998 live in ARKANSAS.3. Ex...What kind of 'Coke' do you want?5. People actually grow and EAT okra!!6. Sweet Iced Tea is appropriate for all meals.7. You have to switch from 'heat' to A/C in the same day.8. All the festivals across the state are named for an animal, insect, grain, vegetable or fruit.9. You work until you are done or it's too dark to see.10. Everyone can't be an Arkansan: You have to be BRAVE to live here!

Tried a new, very easy recipe last night.
Ingredients
boneless chicken breast
1 cup Mayo
2 cups shredded cheddar cheese
1 can cream of chicken soup
1 can cream of brocolli soup
1 head of brocolli with florets cut (or you could use frozen to make it even easier)
Mix ingredients other than chicken breast together. Place chicken in the bottom of a baking dish and cover the chicken with the mixture. Bake at 350 degrees for 45-50 minutes.
The boys loved it! And it's probably one of the easiest things I've ever made and didn't take too long to cook. It was great because I served it with some corn getting two veggies down the kids without them really noticing!Might try out another new recipe tonight. Starting to get back into crock pot cooking season with school getting back into full swing.
