    It's very simple and good. Both my little ones love it and they get a great vegetable included with it so that's a plus!

    Steak Florentine Rolls

    Ingredients:

    Round steak (I usually get about 4-5 pounds, try to get one large piece that is pretty evenly cut rectangular shape and then another narrower piece that will not need to be cut)

    1/3 cup Italian dressing (I like to use Ken's Steak House Northern Italian blend)

    1 - 10 oz pkg frozen chopped spinach (drained and squeezed dry)
    1 garlic clove minced
    1 Tbs fresh basil leaves
    1/2 cup grated Parm or Romano cheese
    1 - 14 oz can stewed tomatoes
    butchers twine

    Cut steak into strips approximately 10" x 4" ( I usually do a total of 3 pieces like this). Use meat tenderizer mallet on both sides of steak, then brush the top of the steak with the Italian dressing. In a bowl combine spinach, garlic, basil, cheese and tomatoes. After mixing ingredients spoon mixture onto the steak and spread evenly just enough to cover the steak. Roll up in jelly roll fashion and tie off with butchers twine. I cook ours in the crockpot, the meat turns out so tender you can cut it with a fork. I place the rolls into the crockpot, piling on top of each other if necessary and then pour any remaining mixture on top of them. I cook on low for 3-4 hours.

    I usually serve with mashed potatoes and green beans!

    Thinking homemade pizza tonight.....Parker was watching one of the little shorts on the Disney channel yesterday "This is Daniel Cook" where Daniel goes to the pizzaria to learn how to make a pizza and Parker decided that he wants to help me make one too! Will throw the ingredients in the bread maker this afternoon so it will whip up some dough!

    Melissa, that sounds great. We will have to give that a try.


    Tonight we had pork roast, corn and twice baked potatoes.
    I think I am going to fix Fried Bass filets tomorrow!!

    Things I have learned living in ARKANSAS
    1. Possums sleep in the middle of the road with their feet in the air.
    2. There are 5,000 types of snakes and 4,998 live in ARKANSAS.
    3. We have four seasons: Almost Summer, Summer, Still Summer and Christmas.
    4. A carbonated soft drink is not a soda, cola or pop...It's a 'coke' regardless of brand or flavor. Ex...What kind of 'Coke' do you want?
    5. People actually grow and EAT okra!!
    6. Sweet Iced Tea is appropriate for all meals.
    7. You have to switch from 'heat' to A/C in the same day.
    8. All the festivals across the state are named for an animal, insect, grain, vegetable or fruit.
    9. You work until you are done or it's too dark to see.
    10. Everyone can't be an Arkansan: You have to be BRAVE to live here!

    I have decided to only make dinner on Monday nights.. and yes the husband is well aware of this... not happy.. but well aware... the reason behind this.. fridays and saturdays we always go out, sundays dinner is always at my mom's.. and tuesday, wednesday, thursday.. I just do not have the time..(good thing I don't have children!)

    Well, last night was hotdogs, fajitas, popcorn, chips, fruit and a desert tray of cookies and lemon squares. and a fridge full of beer and cokes. At least that part of the night was good...

    LOVE that plan. Seriously. You have no idea. I think you are my new hero.

    Last night we had hot wings, salad, and corn. My gut still hurts.

    I didn't realize that show had done that well! Daniel Cook is a little show done in Toronto. He used to annoy the heck outta me, I have grown used to him now. Youngest DD loves him.

    I think I am making hamburgers and hot dogs on the BBQ tonight. Not sure what to have with though.

    OOOOh, garlic bread sounds great right now. I have not had any bread in about 2 weeks!!!
