Here's a partial list of what I miss:
Mickey shaped butter pats in the sit-down restaurants. I forgot this
Linen napkins in The Plaza Restaurant. Yes, it is the little touches that are missing.
Menus that varied greatly from restaurant to restaurant. I'm tired of seeing
"Penne Pasta" on every menu! and the salmon
The Fife & Drum Corp in Liberty Square.
Affordable meals at Cinderellas's Royal Table.Our first breakfast there was free, free breakfasts back then in Sept & Oct as a length of stay perk.
Unique Disney merchandise. Miss the endless choice of T-shirts
The resort newspapers that you received upon check-in that included a little
backstory on the resort (themeing). Still have grand opening letters from the original Port Orleans and the year afters
Dixie Landings.

The ice-cream socials that American Express sponsored at The Contemporary.
Access to the roof of The Contemporary to watch the MK fireworks.

Tinker Bell zipping back and forth along the loading area of Peter Pan's Flight.
The see-saw rock on Tom Sawyer's Island.It is gone? Oh Dear.
The fountains in front of Pirates of the Caribbean.
The steel drum band in Adventureland.
The Orange Bird at Sunshine Tree Terrace in Adventureland.
That's all I can think of right now. Most of these are little touches that would not cost Disney that much money, but would add to the experience of WDW.
