I am suprized that they got rid of The ExtraTERRORestrial Alien Encounter at MK. I never went on it, but it was ALWAYS packed whenever I was near there. I guess they wanted to change it to Stitch to draw in some of the younger audience.
I only remember Horizons a little bit because it closed when I was pretty young, but I will tell you all I know, and perhaps someone else can help you out more. It was at Epcot and I do believe it was a continuous mover, like the HM. The part I remember most vividly is the ending, where you were given a choice between four different scenarios, so the ride was "customized" for a brief portion at the end. I believe the scenarios all had to do with different locations, like the desert, ocean, tropical rain forest, etc. I remember the end of the ride because I always had great difficulty deciding which option I wanted to pick. :D
There are so many that I remember and wish were still at WDW!
Let's start in the Magic Kingdom:
1) I agree with everyone about If You Had Wings. There's a great site which is devoted to it and other extinct attractions at WDW you might want to check out:

2) Something I haven't seen mentioned - I'm not sure if it qualifies as an attraction or not - the Penny Arcade on Main Street. People who never experienced it seem to think it was just an arcade like the one currently in Tomorrowland. It was not. It contained lots of antique and older arcade games as well as the hand crank movie machines and one man band. It really helped set the tone and advance the theme of Main Street. That was always our first stop when I used to go with my parents.
Some of the items from there can still be found in the MK. We always play baseball on the machine in the very back of Casey's Corner.
3) Skyway - There's nothing like viewing the MK from above, especially at night.
4) Mr. Toad - No explanation necessary.
5) Mickey Mouse Revue - A classic. I guess I'll have to go to Tokyo Disney to experience it again.
I'm sure I could think of more, but I don't want to end up taking a whole page with my post!
I detest the new Tiki Room! I can't stand Gilbert Gottfried as it is, and now they have him bellowing over the Parrots and Tikis. It was all I could do not to run out of the theater! Even my 5 year-old was annoyed by it. I thought the old show was much more entertaining..but that's just me.
I miss 20,000 Leagues. It was corny, the effects pretty cheesy, and the subs usually has a weird smell, but I always thought it was cool seeing the subs gliding silently through the lagoon, especially at night.
Finally, I miss the old Astro Jets. (Anysone see a pattern here???) IYHW was cool, but I love the Buzz ride just as much.

Thanks! Yeah, I did. When I'm bored, I like to take pics of Disney girls and make them more like me... which basically is just making them paler with brunette hair and all their clothes are purple (my fav color)!

3. If you had wings / Dream Flight
4. The Penny Arcade
5. Wonders of Life Pav. (I know what your thinking, they didn't ofically close it but come on people, it's closed almost all the time!!):D

This line has haunted me ever since the ride was taken away... bring it back, please!
Oh, and you got to chose your adventure at the end... Space, Underwater, or Dessert.... Always chose Space!-pirate-
