I keep a insanely detailed spreadsheet of our families spending (because I am a dork like that)
As a family, we go through and decide one thing each person will give up for the couple months leading up to the trip for me it's always my Starbucks, my husband gives up lunches out at work, the kids usually give up school lunches, special treats, etc.
The money we would normally spend on these things goes to Disney
We also have a vacation account, etc.

I wish I could score double time but I settle for time and a half. We just got the smack down at this months supervisor's meeting. We were told to avoid unneccessary overtime. I'm going to try and sneak in 4 hours on Monday since the salaried supervisors are off. That's a nice little deposit into the fund.
So far...we havnt had any issues from the powers to be concerning o.t. Everyone knows that when someone calls of sick....it will cause o.t. So, you know.......it gets spread around bit. I take all I can get but it is distributed fairly and one can't hog all of itBut I try.
We have minimum staffing so I think that the city understands it cheaper to pay overtime than hire more firefighters.

I hog as much as I can too. I don't like to share! I'm lucky that scheduling isn't my supervisor's strong point. I find holes in the schedule that he fails to catch. Plus I have made arraingments with some friends there to call me right away when there are call offs. I banked over 600 hours of OT last year. I usually put some in the bank for vacation time but I've been more focused on paying the wifes medical bills from her surgery in October and the subsequent hospital stay in November due to the hospital/doctor's mistakes.
We've just booked for October 2013. I'll pay for it monthly spreading the cost. We also have a large whisky jar we put lose change in which goes towards spending money ;-)

Matthew has saved over £80 in 20p coins for his spending money. When you are 4 and cute and have a saving jar then everyone contributes to it!
My boys save up their money in peanut butter jars, and half of it becomes their Disney spending money, they love saving for it and they're only 6 and 3. lol...
As for me, I used our Christmas bonus last year.
