PotC, Soarin, have a blended coffee at the poly-even though that can take 2 hours. RNRC, Crystal Palace at breakfast when possible.
Capture some details in pics..one of my favorite pictures is of a small bronze Pinocchio statue at the center of the hub in MK where Walt and Mickey are. *Of course I got the Man and the Mouse too!;)
We love to ride Spaceship Earth at night as our last ride in Epcot. :)
Riding the jungle cruise at night is also a unique and very cool experience! It's a great attraction to end a day at the Magic Kingdom!
At Downtown Disney go by the Balloon Ride and get a Ice Cream Banana Split (or whatever is your favorite at Wetzels and Hagen Dazs and then listen to Dominic jam out....then cross the bridge and line dance whoever is playing there. Never miss doing this unless its pouring down rain.
Tommrowland Transit Authority is a must do multiple times each visit to the Magic Kingdom!
Most items on the list are common must-do, high visibility attractions. Books could be written about what is available outside the 4 parks.
Here are a couple hidden gems.
1) Take a horse drawn carriage ride at Fort Wilderness or sleigh ride (Nov-Dec) to see all the lights people put up on their campsite. Fort Wilderness is only a short boat ride from Magic Kingdom. You can also go horse back riding on the trails or pony rides for smaller kids during the day.
2) See YeHaa Bob at Port Orleans Riverside, Wednesday-Saturday 8pm-12pm in River Roost room, rocking piano is awesome, great effect!>)
Another great thing outside of the parks is tour the resorts on the monorail loop. Walk around taking in the themeing, then simply hop on the monorail to go to the next.

Shut down at least one park during EMH.
Hug a mouse.
Give away a set of unused Fastpasses and watch the giftee's face light up.
Search for Hidden Mickeys.
Wine Flights in World Showcase.
Check out the animals at AK.

Pin trade.
Turn off the cell phones and enjoy the people and places around you.
One of my son's must do things at Epcot was to buy a homemade chocolate chip cookie from Germany. This year we couldn't because the bakery had been turned into a caramel paradise.
