I like to sit with my back to the big pillar thing in the middle of the main viewing room in the seas and watch the dolphins. Not always quiet, but tranquil. Depends on which type of peaceful you are looking for.
The happiest place on earth is where my kids are!
I think the water gardens in Japan are very peaceful and the gardens near Ellen's Energy Adventure are normally quiet in the morning for a cup of coffee.
I have to agree with most of the suggestions already stated, but if you're looking for a/c....the area behind Club Cool is often a good hide-out from the summer heat.

Thanks for all of the great places that have been listed. One place not mentioned is the maze hedges in the Great Britian area, it is always quite. I will be there on Monday!!! Yahooooooooooooooooooooooooooooo!!!!!!!!!!!!!!!!!! !!!!!!!!!!!!!!!!!!!!!!!
If I need a place to get away from all of the crowds, I like to go into the room right outside of Mitsukoshi in Japan Pavilion. It is the Japanese Anime Exhibit.
Also the Tomb Warrior room in the China Pavilion. They have replicas of the terra cotta army warriors and it is so nice and quite. It is in the building right behind the pond.

One of the most peaceful places is in the gardens in the Canada pavillion. Many people overlook the Canada pavillion, and those who dont are there just to see the movie. You can often find your self being the only one, or one of few in the gardens.
*Buy a Moose Head beer, and relax, enjoying the serenity that is Canada *eh!

I agree Herbertwk4 , Canada especially about an hour before the fireworks.
I have found that one of the peaceful spots for my family is right inside the Universe of Energy Pavilion, I know it is kinda odd as it is a mainstream place, but if you find a nice place to sit and people watch, it is very relaxing.
A super quiet place (with great air conditioning) is Gallery of Arts and History in Morocco at Epcot. No matter how crowded the parks are 99% of the time the building is empty when I go in, people just seem to pass it on by. It's on your left as you go towards the main building from the WS path. There are exhibits inside and some comfortable benches.
