We're trying to decide between the Undiscovered Future World tour or
the Hidden Treasures tour. Any suggestions? It would be neat to see a
bit more of the future world pavillions, but i'd also like to see the countries
without people around. We'll be doing one this time around.

I took the Undiscovered Future World tour in May. IMHO, it was a bit slow in the beginning, but got more interesting in the last 2 hours. It may depend on the guide. We saw 3 corporate lounges (SSE, Land, Imagination), got a "History of Disney 101" talk, rode Imagination, got to walk a little ways into the construction area for Soarin', and then had a snack break at the Land (take it, you'll need it!). Then we got to go in the control room at Mission:Space, rode Test Track via the back door, and went to Cast Services, where we met one of the international CM who talked about her experiences in the US & saw wardrobe. We finished at the docks where the Illumination barges are loaded and ended in China (where you can get a discount on Lunch at the Nine Dragons). They also offered us spots at a reserved viewing area for Illuminations that evening (unfortunately, I had to catch a plane).
If you want to see some of the countries w/o people for no extra charge, you can enter World Showcase via the International Gateway entrance. It opens an hour before FW does, even though WS isn't open until later. You'll be able to see the outsides of UK & Canada (they rope off the bridge towards France), and if you keep going around you should be able to see outside of Mexico & Norway, since the Princess Breakfast at Norway opens early.
