I feel like this movie doesn’t get nearly the credit it deserves! Let’s take a trip to the Amalfi coast and have an Italian kind of night.
To start the night, we are a bit of a competitive family, so a version of the Portorosso Cup is absolutely in order before dinner and a movie! We don’t have a pool or live near water, so a race through the sprinklers while dodging each other and the dogs, followed by a wheels race — bikes, scooters, roller blades are all acceptable. Everybody wins because at the end of this race we have a pasta dinner!
In the summer, I love eating a bit lighter so this in honor of the Amalfi coast is a pesto orecchiette, with white beans and spinach. For dessert, gelato of course! Thankfully you don’t have to go all the way to Italy to get gelato any more. The grocery store has a few good options.

Luca Pesto Orecchiette
Cook a bag of Orecchiette pasta in heavily salted water.
Drain and rinse a can of white beans and thaw frozen spinach.
Once the pasta is done, drain and reserve a bit of the pasta water.
In a large oiled pan, add the beans and spinach.
Once these are warmed add the pasta, a bit of the pasta water (about a quarter cup), and your store bought pesto.
Once everything is warmed through, remove from heat and add as much parmesan as you like!
Then nothing left to do but mangia!
